We believe that a quality spirit is a direct reflection of the time and care put into its creation. Honey is a temperamental creature, but with gentle hands and a little bit of patience it can be shaped into a flavourful and complex spirit unlike anything else.
All of our honey comes from the far-reaching wild clover fields of Northern BC, unpasteurized and all-natural. We then spend the time blending it with just the right amount of our very own glacier water and specialized yeast to start it on the path to becoming a honey wine or “mead”. Once it has fully matured we begin the process of distillation by heating the mead and collecting the alcohol vapours as they boil off. Unlike traditional stills, our custom designed still has been created specifically for working with the delicate requirements of a honey based spirit.
Every step of the journey has been carefully crafted to bring the subtleties and intricacies of the honey to each bottle of spirit we make.
